Simply activate Global Roaming on the network you use in your home country before you arrive in New Zealand.
After that, all of your calls and other services you use will be billed to your network account back in your home country. Your existing mobile email settings should work fine in New Zealand, as long as you have set Global Roaming set up before you leave your home country.
